Baked Ravioli – A Hot Meal for those cool evenings

Ingredients:
1 lb – [500 g] frozen cheese or meat ravioli
2 tbsp – [30 mL] Canola or Vegetable Oil
1 onion, chopped
2 cloves garlic, finely chopped
1 tsp – [5 mL] dried basil
¼ tsp – [1 mL] red pepper 
¼ tsp – [1 mL] red pepper flakes
3 tbsp – [45 mL] All Purpose Flour
1 can – [375 mL] Regular, 2% or Fat Free Evaporated Milk, hot
1 ½ cups – [375 mL] tomato sauce
1 tsp – [5 mL] salt
¼ tsp – [1 mL] pepper
1 ½ cups – [375 mL] grated Village Mozzarella cheese
¼ cup – [50 mL] grated Village Parmesan cheese 

Number of servings (persons) – 6 portions
Preparation time (min) – 15 minutes
Cooking time (min) – 35 minutes

Preparation:

Preheat oven to 350F (180C). Grease an 8” x 8” (2L) baking dish. 
Cook ravioli according to package directions. Drain well and reserve.
Heat oil in a medium saucepan over medium heat.. Add onion, garlic, dried basil and red pepper flakes. Cook for 3 minutes, stirring occasionally until softened. Stir in flour. Cook for 3 minutes, stirring but do not brown.
Whisk in hot evaporated milk and bring to a boil. Add tomato sauce. Cook for about 3 minutes, stirring often. Add reserved cooked ravioli and mozzarella cheese. Stir to combine. Pour into prepared baking dish. Sprinkle with Parmesan cheese. 
Bake in preheated oven 30-35 minutes or until bubbling and lightly browned. 

TIPS: • You can use tortellini, gnocchi or any other of your favourite pastas.
